[entropy][scripts] Cleanup entropy test scripts

No notable functional changes here. A few bugs fixed around bash's
`set -u` option.

[entropy] Test basic jitterentropy conf options

The repeat-boot-test script repeatedly calls the run-boot-test script,
making it easier to run tests with varying parameters and multiple
trials.
