selftests/bpf: fix stacktrace_build_id with missing kprobe/urandom_read

Kernel function urandom_read is replaced with urandom_read_iter.
Therefore, kprobe on urandom_read is not working any more:

Fix this by replacing urandom_read with urandom_read_iter in the test.

selftests/bpf: fix selftest after random: Urandom_read tracepoint removal

14c174633f34 ("random: remove unused tracepoints") removed all the
tracepoints from drivers/char/random.c, one of which,
random:urandom_read, was used by stacktrace_build_id selftest to trigger
stack trace capture.

Fix breakage by switching to kprobing urandom_read() function.

selftests/bpf: Remove SEC("version") from test progs

Since commit 6c4fc209fcf9d ("bpf: remove useless version check for prog
load") these "version" sections, which result in bpf_attr.kern_version
being set, have been unnecessary.

Remove them so that it's obvious to folks using selftests as a guide that
"modern" BPF progs don't need this section.

selftests/bpf: Use BTF-defined key/value for map definitions

Change map definitions in BPF selftests to use BTF-defined
key/value types. This unifies the map definitions and ensures
libbpf won't emit warning about retrying map creation.

selftests: Use consistent include paths for libbpf

Fix all selftests to include libbpf header files with the bpf/ prefix, to
be consistent with external users of the library. Also ensure that all
includes of exported libbpf header files (those that are exported on 'make
install' of the library) use bracketed includes instead of quoted.

To not break the build, keep the old include path until everything has been
changed to the new one; a subsequent patch will remove that.

selftests: bpf: centre kernel bpf objects under new subdir "progs"

At the moment, all kernel bpf objects are listed under BPF_OBJ_FILES.
Listing them manually sometimes causing patch conflict when people are
adding new testcases simultaneously.

It is better to centre all the related source files under a subdir
"progs", then auto-generate the object file list.
